Rawmaine Burrito

Sun-Dried Tomato Paste:

  • sun-dried tomatoes
  • sunflower seeds
  • chickpeas (soak all three for 6-8 hours)
  • tahini
  • organic shoyu
  • 1 large garlic clove
  • red onion
  • red bell pepper
  • fresh ground pepper
  • water to help turn-over in the processor

It looks like a lot but it’s simple: pre-soak the necessary and then process everything together. I don’t measure as I create and even if I did, my measurements this time were wrong because it came out more watery than I intended. So just follow your instincts; you know what you like. 

Marinaded Portabella:

  • chopped portabella mushroom
  • organic shoyu
  • sesame seeds

Set everything in a bowl and marinade with the pre-soaking stuff. Stir every once & awhile to ensure maximum absorption. 

Assemble the following inside a romaine lettuce leaf:

  • sun-dried tomato paste
  • marinaded portabella
  • avocado
  • red bell pepper
  • grape tomato
  • fresh ground pepper

This was so yummy! And there was a lot of tomato paste leftover which is my favorite because leftovers are fun to play with :)
